How often have you heard that eggs are bad for you?

Or if he asks for an egg, will he offer him a scorpion?  (Luke 11:12; NKJ)

Have you ever wondered if eating eggs really does cause high cholesterol levels?  Are they really bad for us?  I’ve had people often ask me these questions.  I believe this is one more lie that we’ve been fed through the years.  In reality, healthy eggs are one of the most perfect foods we can eat. 

Eggs contain all known nutrients except for vitamin C.  They are good sources of fat-soluble vitamins A and D as well as certain carotenoids that guard against free-radical damage to the body.  They also contain lutein, which has been shown to prevent age-related macular degeneration.

According to the International Journal of Cardiology there have been numerous myths that have skewed our belief about eggs.  An article in the March, 2005 issue stated that: “…eating eggs on a daily basis may prove to hold numerous health benefits, especially a decreased risk of heart disease. Research showed that eating eggs every day did not produce a negative effect on endothelial function, an aggregate measure of cardiac risk nor did they cause an increase in cholesterol levels. Six weeks of egg consumption had no effect on total cholesterol or LDL levels.”

Dr. Joseph Mercola also states that eggs are one of the healthiest foods we can eat.  However, we do need to know what to look for and where to find healthy eggs.  Choose the higher quality, free-range, organic eggs.  Organic eggs are a great value and relatively inexpensive. They are an incredible source of high-quality nutrients that many of us are deficient in–especially high-quality protein and fat. They serve as an incredible, nearly ideal fuel source for most of us. Additionally, they are incredibly inexpensive relative to other food options.  Purchasing eggs from a local source or from a farmer that you know is ideal.  Many food co-ops also offer organic or free-range eggs.
