Decadent Chocolate Cheese Pie
Ingredients
Nut Crust
1 cup
raw almonds
1/2 cup
raw pecans
1 cup
unsweetened coconut
3 tbs.
butter
3 tbs.
honey
Pie Filling
1-8 oz.
package cream cheese
1-10 oz. package
chocolate chips
1/2 cup
honey
1 cup
heavy whipping cream
1 tsp.
vanilla extract

Description
A decadent, rich pie for special occasions. A little piece goes a long way.
Instructions
For crust: Chop nuts and coconut in food processor until coarsely chopped. Melt butter and honey in small saucepan. Gradually pour melted butter and honey into nut mixture in food processor. Process until blended. Pat crust into buttered 9 inch pie pan. Crust can be baked at 350 degreess for about 8 to 10 minutes. (We like it raw so I don't bake it.)
Pie Filling: Melt chocolate chips and honey in a double boiler. Stir until smooth. (If you don't have a double boiler, you can put a bowl on top of a pan of simmering water.) Beat cream cheese until smooth in food processor or mixer. Pour melted chocolate into cream cheese. Add vanilla and mix well. Beat heavy cream in large bowl until stiff. (Chilling bowl and beaters will hasten process.) Fold chocolate/cream cheese mixture into whipped cream. Pour into crust and refrigerate for several hours until set. Garnish pie with whipped cream and mint leaves.
Notes
I use organic cream cheese,and chocolate chips. Try to find heavy cream from a local dairy. If not, then use organic whipping cream.
