Ingredients

crispy walnuts
1/2 cup
unsweetened coconut
2 tbs.
carob or cocoa powder
2 tbs.
butter, softened

almond or peanut butter
1/4 cup
honey

Description
A yummy, nutty quick treat to satisfy that little "sweet tooth" in a healthy way.
Instructions
Place all ingredients in food processor bowl with metal blade. Pulse until mixture is soft and combined. (Can also be mixed by hand if walnuts are chopped first.) Form into balls with buttered hands and roll in coconut if desired. Mixture may need to be chilled first. Mixture can also be placed in buttered pan and cut into sqaures.
Notes
I use organic, unsweetened coconut without sulfur dioxide. I recommned pure vanilla extract, not artificial flavoring. I also recommend organic butter and raw honey. To make crispy walnuts, soak the walnuts in salt water for approximately 8 hours and then dry them in a warm oven or a food dryer until crispy.
