  • 1, 14 oz can pineapple chunks (in juice) *
  • 1, 11 oz can mandarin oranges (in juice)
  • 1 organic apple, chopped
  • 1 organic pear, chopped
  • 1/2 cup unsweetened, unsulfured coconut
  • 1/2 cup walnuts, chopped
  • 1/2 cup organic sour cream or organic plain, whole milk yogurt
  • 3 tbs reserved pineapple juice
  • 1 tbs agave nectar or honey

DescriptionDescription  A quick and easy fruit salad that uses fresh and canned fruit.
InstructionsInstructions  Drain pineapple, reserving juice. Drain mandarin oranges. Place pineapple chunks and mandarin oranges in large bowl. Add chopped apple and pear. Gently stir together. Add coconut and chopped walnuts. Then gently stir together sour cream (or yogurt), pineapple juice and agave nectar. Pour over fruit and mix together. Serve in pretty, glass dishes. Can garnish with mandarin oranges, walnuts and/or mint leaves.
NotesNotes  The pineapple I buy is organic from Native Forest, thus the reason for the 14 ounce can. Feel free to use a larger or smaller can as desired.
