IngredientsIngredients  
  • 1 cup sliced cucumber (about 1 small to medium cucumber)
  • 1 cup cut up red, orange or yellow pepper (about 1 small pepper)
  • 1 avocado, peeled and cut up
  • 1 cup cut up fresh tomatoes
  • 1/4 cup chopped onion
  • 1 cup cubed raw mild cheddar cheese
  • 2 to 3 tbs organic olive oil
  • 2 tbs brown rice vinegar
  • 1/2 tsp Herbamare
  • pinch cayenne pepper
  • 2 tbs minced fresh basil (optional but adds wonderful flavor), can use 1/2 to 1 tsp. dried basil instead
  • 1/8 tsp paprika

DescriptionDescription  An easy raw salad without exact amounts or ingredients. Use whatever raw vegetables you have on hand and mix with olive oil and vinegar and fresh or dried herbs.
InstructionsInstructions  Peel cucumber, unless organically grown, and slice. Place in large bowl. Cut up pepper, avocado and tomatoes into cubes or bite-sized pieces and add to bowl. Chop onion and add to vegetables. Add cubed cheese. Pour olive oil and vinegar over salad. Sprinkle with Herbamare, basil and cayenne. Gently stir salad together. Sprinkle top with paprika before serving.
NotesNotes  I use organically grown vegetables when available. Recently I've found hot-house cucumbers, tomatoes and peppers without herbicides which are very tasty.
