  • 1 medium carrot, shredded
  • 2 cups shredded purple cabbage, (about 1/4 head)
  • 3 cups shredded green cabbage, (about 1/3 head)
  • 2 tbs chopped onion
  • 2 tbs fresh minced parsley (optional but nice)
  • Dressing
  • 1/4 cup organic sour cream*
  • 1/3 cup Vegenaise*
  • 1/2 to 1 tsp sea salt
  • 2 tbs organic apple cider vinegar
  • 1 tbs honey or Agave nectar*
  • 1/2 tsp dijon mustard

DescriptionDescription  For a nice change from a green salad, try this colorful side salad.
InstructionsInstructions  Shred carrot and cabbage in food processor using shredding blade, (or shred by hand with a grater.) Chop onion and parsley together in food processor using the metal blade (or mince by hand.) Place vegetables in a large bowl and mix together. In a small bowl, stir together sour cream, Vegenaise, apple cider vinegar and salt. Slowly stir in honey or Agave nectar and mustard. Combine until blended and smooth. Pour over vegetables and stir together until mixed well. Serve chilled.
NotesNotes  I recommend using organic sour cream and NOT low fat. Agave nectar is a mild liquid sweetener, similar to honey found in the health food section of the grocery store. Vegenaise is similar to maynonnaise. It's found in the refrigerated section of the grocery store. I use the one with a purple lid made from grapeseed oil.
