  • 2 pkgs. chopped frozen spinach, thawed and drained
  • 3 eggs
  • 1 cup cottage cheese
  • 1 cup grated cheese (mild cheddar), divided
  • 3 tbs. melted butter
  • pinch cayenne pepper
  • 1/8 tsp. nutmeg
  • 1/2 tsp. Herbamare
  • 1/8 tsp. paprika

DescriptionDescription  A quick, "green" dish that even picky eaters will enjoy.
InstructionsInstructions  Beat eggs, add cottage cheese, 1/2 cup grated cheese and melted butter. Stir in spinach, cayenne, nutmeg and Herbamare. Spoon into buttered casserole dish. Spread remaining 1/2 cup chese over top. Sprinkle with paprika. Bake at 350 degrees for 1 hour or until set.
NotesNotes  I use organic frozen spinach, organic cottage cheese and organic, free range eggs.
