  • 1 cup organic cottage cheese
  • 2 cups organic shredded cheddar cheese
  • 1, 4 ounce can diced green chiles
  • 1/4 cup spelt flour (or whole wheat)
  • 1/2 tsp baking powder
  • 1/4 tsp Herbamare
  • 1/8 tsp cayenne pepper
  • 1/8 tsp paprika

DescriptionDescription  An easy to prepare, yet filling and healthy supper dish. Add a green salad or spinach salad along with some fresh fruit for a wholesome meal.
InstructionsInstructions  Place eggs in a large mixing bowl. Beat with whisk until combined well. Stir in cottage cheese, green chiles and shredded cheese. Mix well. Then stir in flour, baking powder, Herbamare and cayenne. Pour into buttered casserole dish. Sprinkle paprika on top. Bake at 350 degrees for 40 minutes or until set.
NotesNotes  Spelt is a grain that is similar to wheat, although spelt is higher in protein and is tolerated better by people suffering with food allergies. Spelt flour is found in the health food section of the grocery store. Once opened, store in the refrigerator or freezer.
