Meatloaf with a TwistMeatloaf with a Twist   


IngredientsIngredients  
  • 1 lb ground beef or turkey
  • 1/2 medium onion, chopped
  • 1/2 red pepper, chopped
  • 1 clove garlic, minced
  • 1 stalk celery, minced
  • 1 medium carrot, chopped
  • 1/3 cup fresh parsley, minced (or 2 tbs dried)
  • 1 small zucchini, chopped
  • 1 egg, beaten
  • 1/2 tsp dried basil
  • 1/2 tsp marjoram
  • 1/4 tsp cayenne
  • 1 tbs Tamari
  • 1 tsp Herbamare
  • TOPPING
  • 1/3 cup organic tomato paste
  • 2 tbs organic apple cider vinegar
  • 2 tbs pure maple syrup
  • 1 tbs Tamari
  • 1 tsp Dijon mustard
  • dash of hot sauce
  • about 2 tbs water to thin sauce

DescriptionDescription  All the vegeatbles adds a slight twist to an all-time American favorite. Serve with a Waldorf salad and a green vegetable.
InstructionsInstructions  I chop all the vegetables in the food processor. Mix vegetables and meat together in large bowl. Beat egg and add to mixture. Then add Tamari and herbs and seasonings. Place in oiled (I use coconut oil) loaf pan or roasting pan. Bake for 30 minutes at 350 degrees. Mix topping ingredients together, adding water as needed to thin sauce if desired and pour on top of meatloaf. Bake for 30 more minutes.
NotesNotes  Tamari is a healthier form of soy sauce. It's found in the condiment area of the natural foods section. Herbamare is a seasoning salt made with sea salt and herbs.
