Brunswick Stew

organic coconut oil

organic potatoes

organic tomato puree or diced tomatoes
4 cups
cooked and cut up, free-range chicken
6 cups
organic chicken broth

frozen organic corn
1 package
frozen baby lima beans
1/2 to 1 tsp
Herbamare
1/4 to 1/2 tsp
cayenne pepper
1 tsp
dried parsley
3 pieces
cut-up, cooked organic turkey bacon (optional)

Description
Brunswick Stew is one of those hearty, Southern stews that "sticks to the ribs" and warms you up on a cold, winter's evening.
Instructions
In a large soup pot, sauté onion in coconut oil until soft. Wash and cut up potatoes into bite-sized chunks. If using organic potatoes, no need to peel them. Add to the cooked onions. Add tomatoes, chicken broth, chicken, corn and lima beans. Bring to a gentle boil. Turn down to simmer. Add herbs, seasonings and bacon if desired and simmer for about 40 to 50 minutes. Adjust seasonings. Can add hot sauce if you want it spicier.
Notes
Herbamare is an herbal seasoning salt containing sea salt and various herbs. It can be found in the herbs and spices section in the health food section of the grocery store. I roast a whole chicken either in the oven or the crockpot. After allowing it to cool, I pull the meat from the bones. This makes great Brunswick Stew.
