  • 2 tbs organic coconut oil
  • 1 cup chopped onions
  • 4 cups organic grated carrots
  • 1/3 cup organic tomato paste
  • 1 cup organic chopped apples
  • 4 cups organic chicken stock
  • 2 cups water
  • 1/3 cup organic raw brown rice
  • 1 to 2 tsp sea salt
  • 1 cup organic raisins
  • 1 cup raw cashew halves
  • organic, plain yogurt

DescriptionDescription  A rich and colorful soup. It's quite filling.
InstructionsInstructions  Heat coconut oil in large soup pot. Sauté onions for a few minutes. Stir in carrots and continue to sauté until onions are soft and transparent,(about 5 minutes). Stir in tomato paste, chopped apples, chicken stock, water and 1 teaspoon sea salt. Bring mixture to a boil and stir in the rice. Cover and reduce heat to simmer. Simmer for 45 minutes. Then add the raisins and cashews and simmer for 10 more minutes. Taste. Can add more salt if desired. To serve, ladle into individual bowls and add 1/4 cup of yogurt to each serving.
NotesNotes  I place the rice in a bowl and cover with water. Allow to soak for several hours before making the soup. The rice will be softer in the soup and is also easier to digest.
