Chicken or Turkey Divan
Ingredients
1/4 cup
butter
1/4 cup
spelt or whole wheat flour
1 1/2 cup
organic chicken broth
2 tbs
sherry
1/4 tsp
nutmeg
1/8 tsp
tarragon
1/8 tsp
cayenne pepper
1/4 tsp
Herbamare
1/2 cup
heavy cream, whipped
1 cup
grated Parmesan cheese, divided
1 1/2 lb
lightly steamed broccoli
6 to 8 slices
cooked, sliced turkey or chicken breast
1/8 tsp
paprika

Description
A yummy dish to use leftover turkey (or chicken) from the holidays.
Instructions
Melt butter in large sauce pan. Whisk in flour and cook over low heat stirring until mixture is smooth and bubbly. Slowly stir in chicken broth. Bring to a boil and boil 1 minute, stirring constantly. Remove from heat. Stir in sherry, spices and Herbamare. Gently fold in whippped cream and 1/2 cup Parmesan cheese. Layer broccoli in buttered 13 x 9 casserole dish. Lay slices of cooked chicken or turkey on top of broccoli. Spread sauce over top of meat. Sprinkle with remaining 1/2 cup Parmesan cheese. Sprinkle with paprika. Bake at 350 degrees for 40 to 45 minutes until golden brown.
Notes
Can use organic chicken broth that comes in a carton. Two packages of frozen broccoli can be used instead of fresh broccoli. Herbamare is an organic seasoning with herbs and sea salt. It's found in health food stores in the herbs and spices section.
